Spring Lamb Shank Stew Recipe
Ingredients:
- 5 lb lamb shanks
- 1/2 cup olive oil
- 3 cloves garlic
- 1 1/2 cups chicken broth
- 6 carrots, cut in 2 inch pieces
- 1 large onion, chopped
- 1 teaspoon oregano
- 1 teaspoon rosemary
- 4 large potatoes, quartered
- 1 cup chicken broth
- 1 cup water
- 1 package frozen peas
- 1 package frozen string beans
- 1 lemon, juice and rind
- 1 cup white wine
Instructions:
1. First of all, you need to poke one piece of garlic in each lamb shank.
2. After that, sprinkle each lamb shank with olive oil, rosemary, salt, oregano and pepper.
3. Bake them uncovered for 30 minutes at 400°F (204°C) then cover and bake them for 3 hours at 325°F (162°C).
4. After 1 hour of cooking time, you need to add the chicken broth, water, lemon juice, rind and wine into the shank pan.
5. After 2 hours of cooking, it's time to add in the carrots and potatoes.
6. Just 10 minutes before serving, add in the peas and string beans.
7. Best served over rice. Enjoy!
